Badam Burfi
Easy & yummy sweet to make on the go...
Soak 2 cups of almond nuts in water for an hour and peel offf their skin. Grind them to a paste adding little milk. In a heavy bottomed pan in medium flame, add 2 cups of milk, 1 cup of sugar and the almond paste. Keep stirring occasionally till the almonds are cooked. Add 3-5 tbsp of ghee. Add 4 powdered cardomoms. Take off from the fire once the mixture reaches a thich consistency and make little pedas out of it. Place a raisin on each peda.
Potato-Peas Salad
This is a very easy to make dish, ideal for breakfast.
Boil a handful of peas and 1 potato - peeled and cut into small pieces with enough salt. Heat 1 tsp of oil in a pan, add 1 tsp of cumin seeds. As they splutter, add 2 split green chillies and 1 diced onion. Add pinch of salt to the onions. As onions become tender, add the boiled potato-peas portion. Break an egg and add to this mixture. Mix it well so that egg gets scrambled and mixed well into the vegetables. Serve hot with tomato sauce.
Peas Briyani
This serves for 2 persons.
Ingrdients:
100 g basmati rice
50 g fresh/frozen green peas
1 big onion
3 flakes garlic
an inch long ginger root
1 long green chilli
spices - 2 bayleaves, 1 cardomom, 1 tsp cumin seeds,
3-4 cinnamon sticks, 3 cloves, 1 Star anise
1/2 tsp chilli powder
1/4 tsp turmeric powder
salt to taste
4 tbsp ghee
250 ml water
coriander leaves for granishing
Preparation:
Cut onion, garlic and ginger into long slender pieces. Split chilli into two. Wash and drain the peas and rice.
In a pressure pan, heat 2 tbsp of ghee. Add cumin seeds and spices.
Add chili, garlic and ginger.
Set aside 1/4 of cut onion. Add rest to the pan and fry till tender.

Oats-Rusk pudding
This is another wholesome and healthy pudding for breakfast and actually its all about layers here.
Pour oats-cooked with enough milk in a slightly thick consitency to your breakfast bowl. Add a layer of 1 inch thickness of powdered rusk. Add few spoons of your favourite sweet sauce - maple/choco/stawberry/caramel. You can also top with a layer of cold milk with fruit titbits !!! This is best served as chilled. You can also add sugar in all the layers proportionately.
Masala Finger Chips with butter dip
Ingredients:
2 long potatoes
1/2 tsp salt
1/2 tsp chat masala powder
1/2 tsp chilli powder
1/2 tsp pepper powder
oil for frying
2 tbsp butter
Recipe:
1. Peel the potato skin
2. Cut potatoes into long fingers of 1/4 inch thickness
3. Heat oil in a pan and fry the potatoes till well cooked. Oil on the potatoes may be absorbed using tissues/oil absorbing sheets.
4. Take a bowl, mix the powders and salt.
5. Add the potatoes and toss gently and fine coat the potatoes with this mixture
6. Serve hot with butter.

I'm a March Baby
Well, today is my B'day. I cut cake with my roomie. Later in the night I cut cake with uncle-aunt. Otherwise a usual boring sleepy day, staring into my workstation.
